My Green Smoothie came about for a few reasons:
- My friend Julie recommended it to me. Check out her blog for great recipes, workouts and inspiration!
- My acupuncturist is constantly telling me that I need to incorporate more protein into my diet, and what better way than a delicious smoothie?
Ingredients (Can serve 2, but I usually drink this whole thing myself!)
- Few slices of cucumber
- sprig of parsley
- stalk of celery
- collard green, chard leaf, or beet greens
- handful baby spinach
- Arugula
- kale leaf
- cube of ginger
- 1 apple or pear
- juice of 1 lemon
- 1 c coconut water
Optional
- Hemp or brown rice protein
- Reishi mushroom powder
- Maca powder
- Camu Camu powder
- 2-4 tbsp flax seeds
- 2 tbsp chia seeds
Sprouting Chia Seeds
What I usually do is either let the chia seeds sit in water overnight in the fridge, OR while I’m preparing all the other ingredients, I will let them soak in the coconut water and apple juice, and occasionally stir.
The blender I use is the Vitamix. It is truly a lifesaver!
